The tea used is the first harvest of new Matcha from Minami-Kyushu city in Kagoshima prefecture.

Until then, people drank brown tea made from roasted tea leaves, but green tea made by this method had a much stronger aroma and taste.

In the late Edo period (1603-1868), a tea merchant in Edo, Kahei Yamamoto, produced gyokuro, a more luxurious version of the traditional green tea.
